Chocolate Peanut Butter Balls

Tonight I decided to try my hand at making Chocolate Peanut Butter Balls. There are many variations of peanut butter balls out there but me being a chocoholic thought that I should try combining my two loves...chocolate and peanut butter. 

I went ahead and winged the entire recipe thinking it'd be cool if I could come up with something on my own and well...I did! So yay for that! I will go ahead and say up front that I forgot one ingredient...rolled oats. But that's okay because this mistake still made a fantastic recipe. But I will be trying this again with rolled oats. 

For this recipe I used chocolate protein powder, peanut butter, honey and chia seedsBtw Kevin...thanks for the peanut butter...I totally owe you because I used all of it. 

I used a small sauce pan and combined 3/4 cup of peanut butter and 1 cup of honey and heated it until they melted and were easy to stir together.

I then put a cup of the chocolate protein powder in a medium size mixing bowl and added the melted peanut butter and honey to it and sprinkled the chia seed in. The amount of chia seed you put in is simply up to you. The benefits of chia seed are endless so the more, the better! I would say I added maybe 1/2 a tablespoon of chia seed to this batch.

 After mixing everything together and seeing how beautiful it looked and how firm the dough was, I just had to try it. Let's be serious...I sample everything I make before it is actually complete, hahaha. 

 And it was SUPER LEGIT! I am VERY pleased with the combination of these ingredients! 

I then lined a cookie sheet with wax paper


 I rolled the mixture into about 1/2 inch size balls and lined them up on the cookie sheet and put them in the fridge for about 15 minutes. There were 2 more balls...I had some taste testers before this ended up in the fridge. ;-)

Here is the final product!! Beautiful, delicious and nutritious! This is a SUPER easy and satisfying recipe. I can't wait to have these as a pre or post workout snack.
